Belted Galloway cattle originated in southwestern Scotland. Efficient converters of rough forage and well adapted to cold, rugged climates. In the summer they shed their coats and tolerate warm climates. Medium in size, cows have very strong maternal instincts. The breed’s relatively light body weight makes it preferred for grazing where heavier animals would damage marginal lands. “Beltie” beef is of very high quality and is said to be one of few breeds able to maintain excellent flavor even when finished exclusively on grass. The beef is well marbled and due to their warm coat, there is no need for excess fat cover insulating the body, resulting in just 2% fat content in finished beef.

Large Black Hog pork is thought to be the BEST, due to the micro-marbled delicious Old World flavor. A heritage breed from southwestern England, nearly extinct in the 1960s; it remains endangered. Hardy animals, able to handle heat and cold, effectively convert pasture and goodies found in the woods into meat. They are great mothers with good sized litters and long lives. Despite their large size they are very docile.
